Quick & easy corn fritters

Ok so you asked for it... these are my easy and delicious corn fritters. Thanks to everyone making me get off my arse - now you've got the recipe to make them too. I made these bad boys for brekky a couple of days ago and gotta be honest they were delish!

They're gluten free, dairy free and grain free and take about 5 minutes to make. The sort of recipe that makes you feel like you're having a luxe cafe brekky and you haven't even left your kitchen.

INGREDIENTS:
- 1 cup corn kernels, steamed (or zapped in the microwave)
- 2 eggs
- 1 tbsp coconut flour
- 2 tbsp flax meal (or LSA or almond meal but add another tbsp of flax or chia if using almond meal)
- 1 tsp turmeric
- Handful of mint, chopped

METHOD:
Squeeze excess liquid from the corn. Mix in the meal, turmeric, chopped mint and coconut flour. Season with salt and pepper if you like. Add in the 2 eggs, mix well and leave to sit for 10min. Heat a little olive oil on a pan, cook little spoonfuls of batter on medium heat until golden. Serve with avo (crucial) or maybe some smoked salmon for the non-vegos.
